1. Dissolve active dry yeast in liquid that's warm to the touch but not uncomfortably hot. Water temperature should be 105 degrees to 115 degrees. If its any warmer and the heat will deactivate the yeast.
2. Always store extra yeast in a cool place, preferably the refrigerator.
3. Read the expiration on the package. Yeast's power diminishes over time, so you can't rely on it after the use-by date.
4. Keep to the type of yeast specified in the recipe. ie: cake, compressed and fast-rising, active dry. You cannot safely substitute without altering the final product.
