How to Bake in a Water Bath

Do this when making cheesecakes. Also, custards and crustless quiches should go in a water bath.
Wrap the bottom and sides of the springform pan to prevent water from seeping into the seams.
Set the pan on a wide sheet of heavy-duty aluminum foil. Fold the foil up the sides of the pan, making sure there are no rips or holes. For the water bath, choose a baking dish or roasting pan that is at least 3 inches wider; but that is no deeper; than the springform pan. Put a kettle of water on when you preheat the oven. After filling the springform pan, set it in the baking dish. Slide the oven rack part way out and set the baking dish on it.
Carefully pour boiling water around the springform pan to a depth of about 1 inch. Slide the oven: rack back gently to avoid sloshing.
