Add diced leftover fruit to pancake batter or serve in a sauce over cake or pudding.
Extend leftover vegetables by reheating with sliced celery, green pepper, water chestnuts, or rice, or by serving with cheese or hollandaise sauce.
A creative way to use leftover meat, is to make a casserole, meat pie, or soup.
I like to freeze some of my leftovers in smaller portions to use later for a quick lunch.
Freeze cooked rice for future use in main dishes or salads.
Save leftover vegetables in a container in the freezer. You can puree these and add to soups. You can add celery leaves, parsley stems, and other vegetable "scraps" to soups. You can even save leftover gravy or sauces and add to the soup.
If you have leftover mashed potatoes, use them for patties, potato soup, or topping casseroles.
Form balls of leftover mashed potatoes around cubes of cheese, roll in parmesan cheese or crumbs and broil until golden brown.
Combine leftover mashed potatoes with chopped onion and shredded cheese, then bake. Tastes like twice-baked potatoes without the work!
