    16 ounces = 1 pound

    1 slice bread = 1/2 cup crumbs

    1 ounce chocolate = 1 square
    1 lemon = 2 to 3 tablespoons juice
    5 pounds sugar = 10 cups
    1 cup raw rice = 3 cups cooked rice
    5 pounds flour = 12 cups

    Emergency Substitutions


    1 whole egg = 2 egg yolks
    1 tablespoon corn starch = 2 tablespoons flour
    1 square (1 ounce) chocolate = 3 tablespoons cocoa + 1 tablespoon butter
    1 cup milk = 1/2 cup evaporated milk + 1/2 cup water
