* For juicier citrus fruits, take from the refrigerator and
microwave at 100 percent power, allowing 45 seconds for one
fruit, 60 seconds for two, and 1-1/2 to 2 minutes for four.
* Nothing preserves a fruit's natural nutrients, shape and
color like micro-poaching. For perfect poached peaches,
combine 2 tablespoons peach or other fruit-flavored liqueur
and 1 teaspoon each freshly squeezed lemon juice and vanilla
in a flat, microwave-proof 2-quart casserole. Arrange 4
halved and pitted ripe peaches skin-side down in casserole,
cover with lid or vented plastic food wrap and microwave at
100 percent power 2 minutes. Turn peaches over, re-cover
and cook 1 to 3 minutes at 100 percent power until tender.
Let stand 3 minutes, uncovered. Slip the skins off and serve
warm or chilled with the casserole juices.
* To soften bananas for banana bread and muffins, pierce unpeeled bananas once or twice and microwave, uncovered, at 100 percent power for 1 minute, turning over at half time. Cool and peel.
