Halloween: Candied Apples

10 to 15 medium apples
3-cups sugar
1/4-tsp cream of tartar
2/3-cup water
1-tsp lemon juice
15-cloves
1 to 2 tsp red food coloring
Recipe
Stick skewers into stem end of apples. Combine sugar, cream of tartar, water, lemon juice and cloves in heavy saucepan; stir over heat until sugar dissolves. Add coloring. Boil, with out stirring, to hard-crack stage. Remove from heat; skim out cloves. Twist apples in syrup quickly; place on buttered cookie sheet. Serve same day as prepared.
YIELD: 15 servings.
