    Christmas: Tropical Holiday Fruit Salad

    2 tablespoons honey
    2 tablespoons fresh lime juice
    1 tablespoon orange juice concentrate
    7 cups mixed fresh fruit chunks (3/4-inch)*
    2 tablespoons chopped crystallized ginger
    Pecan-Orange Cream Cheese (recipe follows)
    18 Keebler® Club® Crackers
    1/2 cup finely chopped sweetened dried cranberries (Craisins)

    For dressing, mix honey, lime juice and orange juice concentrate in small bowl; set aside. Combine fruit in large bowl. Spoon dressing over fruit and toss gently. Serve promptly or cover and chill for 1 hour.


    To serve, stir ginger into fruit. Spread Pecan-Orange Cream Cheese on crackers and sprinkle with cranberries. Serve with fruit salad.


    * Tips and Serving Suggestions:

    Select a variety of colorful fruits from the following: pineapple, papaya, mango, kiwifruit, Asian pear, banana, seedless red grapes, cantaloupe and tangerine or orange sections.

    Serve salad in a large (6-cup) glass bowl or individual stemmed glass serving dishes (set each on a plate surrounded with crackers). Or, spoon salad into avocado halves (brushed with lime juice) or hollowed-out baby pineapples or oranges.

    For an exotic touch, try roasted pistachios, macadamia nuts or cashews instead of pecans in cream cheese.

    Garnish with slices of starfruit (carambola) or fresh mint sprigs.



    Pecan-Orange Cream Cheese:
    In a small bowl, stir together 1/2 cup cream cheese, 3 tablespoons finely chopped roasted pecans, 1 tablespoon granulated sugar and 1/2 teaspoon finely grated orange zest. Cover and chill until serving time.
