Christmas: Susan's Christmas Casserole Cookies

Recipe Introduction
These cookies are ultra-moist balls of nuts, dates and coconuts, scented with vanilla and rolled in sugar. They're super-easy to make, and a good project for kids, since once they're baked the little ones can help roll them into balls and coat them with sugar.

Cookies
2 large eggs
1 cup sugar
1/4 teaspoon salt
1 cup chopped dates
1 cup coconut (either sweetened, unsweetened or toasted)
1 1/2 cup chopped walnuts or pecans
1/4 teaspoon almond extract
1 teaspoon vanilla
Coating
1/4 cup granulated sugar, Baker's Special sugar*, cinnamon-sugar, or the sugar of your choice
Recipe
In a medium-sized mixing bowl, beat together the eggs, sugar and salt until pale yellow in color. Add the remaining ingredients, stirring to distribute everything well.
Spread the dough in an ungreased 9-inch square pan or casserole dish. Bake in a preheated 350°F oven for 35 to 40 minutes, or until the dough is just barely beginning to brown around the edges.
Remove the cookie dough from the oven, transfer it to a bowl, and immediately beat it with a wooden spoon (or metal spoon, if your hands are fairly heat-resistant). Let it cool till you can handle it, then shape it into 1-inch balls. Roll the balls in granulated sugar or cinnamon-sugar, or a mixture of 1 tablespoon edible glitter* and 3 tablespoons granulated sugar. (Using the white edible glitter makes beautiful, sparkly balls.)
YIELD: About 3 dozen 1-inch cookies.
