    In Africa, this stew typically is served over a starchy side dish such as mashed plantains. Rice or steamed millet are equally good.

    List of Ingredients




    1/4 cup vegetable oil
    1 large onion, diced
    1 medium turnip, cut in 1/2-inch dice
    1/2 cup pumpkin or butternut squash, cut in 1/2-inch dice
    2 medium carrots, cut in 1/2-inch dice
    1 small red potato, cut in 1/2-inch dice
    1/2 head cabbage, cut in 1-inch strips
    2-3 hot peppers, minced
    3 cups tomato sauce
    1/2 cup water
    1/2 cup smooth peanut butter
    1/2 cup chopped spinach
    Salt, freshly ground pepper to taste

    Recipe



    Heat oil in large pot. Add onion and cook gently until soft, about 10 minutes. Add turnip, pumpkin, carrots, potato, cabbage and hot peppers and cook 5 minutes longer. Add tomato sauce and 1/2 cup water. Simmer until vegetables are tender, 12 to 15 minutes.


    Remove about 1/2 cup cooking liquid from vegetables and stir together with peanut butter. Return to pan along with spinach, salt and pepper. Cook just until heated through.


    Makes 8 servings

    Preparation time: 20 minutes
    Cooking time: 35 minutes
