    Mardi Gras: Emeril's Cajun Cole Slaw

    List of Ingredients




    2 pounds shredded cabbage
    2 thinly sliced medium onions, about 2 cups
    1 teaspoon Tabasco sauce
    1/4 cup diced red bell pepper
    1/4 cup chopped parsley
    1 cup mayonnaise
    1 teaspoon celery seed
    2 tablespoons white vinegar
    1 tablespoon sugar
    Salt and pepper

    Recipe



    Place cabbage and onions in a large bowl; add Tabasco sauce and toss. Let sit about 20-30 minutes.

    Mix in the bell pepper and parsley. In a small bowl, combine remaining ingredients; mix well and posur over cabbage mixture.


    Toss to coat well; cover and chill about 1 hour.

    YIELD: 6-8 Servings
