New Year's: Pembrokeshire Buns

List of Ingredients
2 ounces yeast
tepid water
2 pounds all-purpose flour
6 ounces granulated sugar
4 ounces butter
4 ounces currants
2 ounces candied orange peel
2 eggs
milk
glaze: combine water and powdered sugar
Recipe
Mix yeast with a little tepid water and a little of the sugar; set aside.
Place flour into a warmed bowl.
Rub in the butter.
Add the currants and remaining sugar.
In a separate bow beat eggs, add the yeast mixture and enough milk to make a pint.
Mix a well in the flour, pour the milk mixture into the well.
Mix and knead mixture.
Place in a warm place, cover with a cloth, and let rise until doubled in size about 45 minutes.
Grease baking pans.
Roll out dough and cut out buns.
Place buns on pans and let proof about 30 minutes.
Preheat oven to 400°F
Bake 15-20 minutes.
While still warm brush with glaze.
YIELD: 36 Buns
