Passover: Farfel with Israeli Spices

List of Ingredients
1-1/2 tablespoons olive oil
2 cups finely chopped onion
3/4 cup finely chopped celery
2 cloves garlic, minced
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon freshly ground black pepper
1/4 teaspoon ground cardamom
2 cups farfel
3 tablespoons chopped fresh parsley
4 cups chicken or vegetable broth
Salt to taste
Recipe
Heat olive oil in a large skillet. Add onion and celery and cook over medium heat for 3 minutes. Add garlic and spices and continue cooking until onion is lightly browned, about 2 minutes. Stir in farfel and parsley and cook for 2 minutes.
Stir in the broth and bring to a boil over high heat. Reduce heat to low and simmer until the farfel is tender and the stock absorbed, 10 to 15 minutes, stirring occasionally.
Correct the seasoning, adding salt or pepper to taste.
YIELD: MAKES 8 (1/2-cup) SERVINGS
