    Christmas: Santa's Coconut & Date Pecan Balls

    List of Ingredients

    2 eggs
    1 c. sugar
    1 c. chopped dates
    3/4 c. coconut
    1/2 c. chopped pecans
    1 tsp. vanilla
    1 tsp. almond extract
    Sugar

    Recipe

    Heat oven to 350 degrees. Butter 1 1/2 quart casserole. In medium bowl, beat eggs. Stir in 1 cup sugar. Add dates, coconut, pecans, vanilla and almond extract; stir until well mixed. Place in buttered casserole dish.

    Bake at 350 degrees for 20 to 30 minutes, stirring once or twice. Cool. Place sugar in shallow bowl.

    Drop mixture by teaspoonfuls into sugar; form into balls. Roll in sugar. Place in container; separate layers with waxed paper.

    Store in refrigerator.
    YIELD: 3 Dozen
