Valentine's Day: Ice Cream Hearts

1 cup ice cream, your favorite type
strawberry fan garnish*
mint sprigs
Recipe
In a small square pan spoon ice cream to a depth of 1/2-inch and freeze. Cut two hearts with a cookie cutter. Put on plates, decorate with chocolate, add the garnishes and serve.
Serves 2
---Chocolate Sauce
1/4 cup heavy cream
1 tablespoons corn syrup
3 ounces bittersweet or semisweet chocolate, chopped fine
Combine ingredients in a saucepan over low heat whisking until chocolate is melted and smooth. Pour into a squirt bottle (I use a plastic catsup or mustard container with a small opening). Can be made 2 weeks ahead of time.
* Strawberry Fan: Strawberries, leave hulls attached
Place berry on a cutting board hullside down. Make 1/8-inch vertical cuts but not completely through, turn on its side or stand it upright and gently spread out the slices. Serve with a dessert.
