    Easy Homemade Applesauce

    Source of Recipe

    “Tasting Club” by Dina Cheney

    List of Ingredients

10 cups 1-inch cubes peeled, cored apple (from about 9 soft apples)

3 tablespoons freshly squeezed lemon juice

    1/4 cup apple cider

1 tablespoon plus 1 teaspoon pure maple syrup

    1/4 teaspoon ground cinnamon

    1/8 teaspoon salt

1 heaping tablespoon freshly grated lemon zest

    Recipe

Place apple pieces, lemon juice and cider in a heavy medium saucepan. Cover and cook over medium heat until the apples are very soft and little liquid remains, about 20 minutes. (If too much liquid still remains, uncover and continue cooking until most of it evaporates.)

Turn off the heat and mash with a potato masher. Add the syrup, cinnamon, salt and zest.

Serve warm or cool, or at room temperature.

    Yield: 5 to 6 servings
