List of Ingredients
1 cup sugar
3 cups milk
10 large egg yokes, beaten
2 cups whipping cream
5 sticks of cinnamon
Recipe
Combine milk cream and 1/2 of sugar and cinnamon sticks. Cook over medium heat for about 15 minutes or sugar dissolves and mixture is hot.
In a large bowl whisk the egg yokes with he remaining 1/2 cup of sugar until pale yellow about 3 minutes. Bring the milk mixture to a simmer, uncovered stirring frequently.
Pour the hot milk into the yokes in a thin stream, whisking. Pour the mixture back into the pan and cook over moderately low heat stirring constantly until it is just chick enough to coat a spoon, 3 to 5 minutes. Do not let custard boil or it may curdle. Strain into a bowl and let cool. Cover and refrigerate for 4 hours.
Pour custard into ice cream maker. Freeze using manufacturer’s instructions.
