    Mascarpone Ice Cream

    4 cups whole milk
    1 vanilla bean, split in half lengthwise
    6 egg yolks
    1-1/4 cups sugar
    2 cups mascarpone cheese



    Recipe

    Place the milk and vanilla bean in a heavy saucepan over medium heat and bring just to a boil. While the milk is heating, whisk together the sugar and egg yolks. When the milk is hot, slowly whisk it into the egg yolk mixture to temper, or to bring the egg yolks to the same temperature as the milk. Pour the mixture back into the saucepan and cook over medium heat, stirring constantly, until the mixture has thickened and lightly coats the back of a spoon. Remove the pan from the heat, remove the vanilla bean, and stir in the mascarpone cheese. Let the mixture cool completely, then freeze according to the directions for your ice cream maker.

    YIELD: About 6 Cups
