    Pina Colada Ice Cream

    List of Ingredients

    6 eggs -- beaten
    1 1/2 cups sugar
    5 cups milk
    1 can frozen pina colada tropical fruit mixer -- (10-ounce) thawed
    -- and undiluted
    2 cups half-and-half
    1 cup whipping cream
    1/2 cup light rum
    garnish: -- toasted coconut

    Recipe

    Combine eggs and sugar in a large heavy saucepan; gradually add milk, beating well. Cook over medium heat, stirring constantly, until thermometer reaches 1600. Remove from heat; let cool. Stir in remaining ingredients, except coconut. Pour mixture into container of a 1-gallon hand-turned or electric freezer. Freeze according to manufacturer's instructions. Pack freezer with additional ice and salt; let stand 1 hour before serving (ice cream will be soft). Garnish each serving, if desired.
