    Prepare the fruit by removing any stalks and leaves, Stone the fruit. Wipe clean or rinse in cold water.
    Cook the fruit in little or no water to soften it and break it down. (This extracts the pectin)

    Add sugar and cook over low heat, stirring constantly, until sugar is completely dissolved. (do not allow mixture to boil until sugar is dissolved)

    Commercially bought pectin is added at this point if nessesary.

    Bring jam to a boil and boil rapidly without stirring until the jam has reached the setting point. (this can take from 5 to 20 minutes)

    Pour into warm jars, cover and label.
