    4 lbs. peaches, peeled, pitted and cut into medium dice
    1 cup water
    1/2 cup fresh lemon juice
    5 cups granulated sugar

    Recipe



    Combine the peaches and water in a heavy 4-quart saucepan over medium heat and cook, stirring occasionally, until the fruit breaks down to a mash, about 30 minutes.


    Bring the mixture to a gentle boil. Stir in the lemon juice and sugar, increase the heat, and bring to a hard boil. Begin to check for jelling (thickening).


    When it is jelled, ladle it into 8 hot, sterilized half-pint jars, leaving 1/4-inch headroom. Wipe the rims and seal the jars. Process in a boiling water bath for 10 minutes.

    Makes 8 half-pint jars.
