Marmalade: Orange-Apple Marmalade

½ lb oranges, washed thoroughly
½ lb cooking apples, washed thoroughly
1 teaspoon lightly crushed coriander seeds
1 cup water
1 cup sugar
Equipment:
Clean jars
A large pot (about 5 quart size)
Cheese cloth
Twine
Cookie sheet
Recipe
1. Cut the oranges into segments and slice the segments into very small triangular slices. Remove seeds and set aside (do not discard). The white fiber in the middle of the orange should be cut away.
2. Peel and core the apples and cut the apples up into small chunks.
3. Lay the cheese cloth on a flat surface and in the middle of the cloth, place the orange seeds, coriander seeds, apple peel. Gather the four corners of the cheese cloth together and tie to make a bag. Place this bag into a large pot.
4. Put into the same pot, the cut oranges and apples and pour in the water.
5. Bring the pot to a slow boil and simmer for one hour.
6. Mean while, spread the sugar on to a cookie sheet and [place into a 250 degree Fahrenheit oven for 15 minutes.
7. Stir the warm sugar into the simmering pot and stir till the sugar is dissolved. Take out the cheese cloth bag from pot.
8. Turn up the heat to bring the contents of the pot to a boil. Keep stirring until the mixture sets, the temperature should 250 degrees Fahrenheit on a candy thermometer. You now have orange and apple marmalade. Store in sterilized jar(s)
