List of Ingredients




1 c. butter
1 c. sugar
1 egg
1 cup cooked and mashed carrots
2 c. sifted flour
2 teasp. Baking Powder
1/2 teasp. salt
1 teasp. vanilla
1/2 teasp. lemon extract
1 c. chopped walnuts, pecans, or almonds


Recipe



Cream butter and sugar. Add beaten egg, mashed carrots, and flour sifted with baking powder and salt. Add flavorings and nuts.

Drop spoonfuls on a well-greased baking sheet. Bake 15 min. in 350 degree oven

Frost the cookies while still warm with icing made with juice of one orange, grated orange peel, and powdered sugar.
