    For the crust:
    3 cups all purpose flour
    1 package Rapid-Rise yeast
    2 tablespoon olive oil
    pinch of salt
    3/4 to 1 cup warm water (105-115 degrees)

    For the sauce:
    1 14-oz. can tomato sauce
    1 6-oz. can tomato paste
    1 tablespoon dried oregano
    1 tablespoon dried basil
    1 teaspoon dried thyme
    2 teaspoons garlic powder
    salt and pepper

    Toppings:
    8 ounces shredded mozzarella cheese
    1/4 cup freshly grated parmesan cheese
    your favorite pizza toppings

    8 individual-sized aluminum foil pie pans
    For the dough: Add flour, salt and yeast to the bowl of a food processor fitted with its metal blade. Pulse for 2-3 seconds to combine. Add the oil and start the food processor. Add the water in a slow steady stream through the feed tube; use just enough water to make the dough come together into a ball. Once the dough makes a ball, run the food processor for another full minute to knead the dough. Remove the dough from the machine, shape into a ball, dust lightly with flour, and cover for 10 minutes to rise. This dough can be made ahead and frozen for up to one month.

    For the sauce: In a glass or ceramic mixing bowl, add the tomato sauce and tomato paste, stirring to combine well. Add the seasonings, cover with plastic wrap, and microwave for a minute or so to warm through. You can dilute the sauce with a small amount of water if it is too thick.

    Raw meat toppings such as sausage, hamburger, or chicken need to be precooked before assembling the pies. Cured meats such as pepperoni or ham do not require precooking, but you might want to cook them a little anyway to give them some browning. Vegetable toppings can be precooked or used as-is, depeding on how you like them.

    To assemble: Preheat oven to 450 degrees. Cut the pizza dough into 8 equal pieces and roll out each piece until it is large enough to cover the entire top of one of the pie pans. Place a thin layer of toppings in the bottom of the pan. Sprinkle about an ounce of the shredded mozzerella cheese over the toppings. Spoon some sauce over the mozzarella. Sprinkle a little parmesan over the sauce. Gently place a piece of rolled-out dough over each pie pan, stretching as needed to completely cover the top; trim off any excess dough, but DO NOT tuck the dough under the rim of the pan.

    Set the assembled pizza pies on a baking sheet and place in the oven. Bake for 12-15 minutes or until the crust is golden-brown. Remove the tray from the oven and let pizza pies cool for a couple of minutes before handling. To serve: place a plate on top of the pizza pie and invert the dish, removing the foil pan. Use a spoon to remove anything that sticks in the pan.

    NOTES:
    Feel free to substitute your own favorite pizza dough recipe and/or sauce recipe. The ones I have included here are easy and kid-friendly. Adult supervision is required, and an adult should take care of precooking the pizza toppings as well as handling the hot items.


    DIFFICULTY: 3 -- There are a few steps that will require an adult, but kids can have fun rolling out the dough and making their own pizza pies.
