    Two-Cheese Penne Pasta

    List of Ingredients




    2 cups penne pasta, uncooked
    1 tablespoon olive oil
    2 cups hot water
    1 cup chicken stock
    1/2 cup heavy cream
    1/3 cup Parmesan cheese, grated
    2/3 cup ricotta cheese
    1/2 teaspoon dried basil
    1/2 teaspoon garlic powder
    salt and pepper

    Preheat oven to 425 degrees. In a large bowl, mix the uncooked pasta, hot water and oil and let stand for 30 minutes to soften pasta.

    In another large bowl whisk together the chicken stock, cream, parmesan, 1/3 cup of the ricotta, basil, garlic powder, salt and pepper to taste.

    Drain the pasta and combine with the cream mixture in a baking dish. Spoon the remaining ricotta over the top. Cover the baking dish and bake for 45 minutes until the pasta is tender and the sauce is bubbling.
