    1 tsp olive oil
    1 chopped medium onion
    4 crushed clove garlic
    1/4 tsp cayenne pepper
    2 small can chopped clams
    1/3 cup evaporated skim milk
    1/4 chopped cup Italian flat-leaf parsley

    Recipe



    1. Heat the olive oil in a nonstick saucepan and add the onion, garlic and cayenne. Sauté over medium heat for about 10 minutes.

    2. Add the clams with their liquid and the evaporated skim milk and bring to a simmer. Simmer until the sauce reduces and thickens slightly, about 10 minutes.

    3. Stir in the parsley. Serve over pasta. Serves 3.
