    1 tsp. Low fat margarine
    4 small skinless, boneless chicken breasts
    1/2 cup fat reduced chicken broth
    2 tbs balsamic vinegar
    1/4 tsp pepper
    4 fat free slices of cooked ham
    4 thin slices light mozza cheese
    1/2 bag of prewashed baby spinach

    In a nonstick 12 inch skillet, melt margarine over medium-high heat. Add chicken breasts and cook until golden brown about 6 minutes. Turn chicken breasts over, cover and reduce heat to medium. Cook for about 6 minutes until juices run clear.

    Increase heat to medium-high. Stir in chicken broth, vinegar and pepper. Cook, uncovered for 3 minutes. Remove skillet from heat and top each chicken breast with a slice of ham and cheese. Cover skillet and wait until cheese melts about 3 minutes.

    Arrange spinach on a large platter, top with chicken and drizzle with balsamic mixture.
