List of Ingredients
1 1/4 cups skim milk
1 1/2 cups wheat bran
1/2 cup brown sugar - not packed
1 1/2 cups whole wheat flour
1 tbsp baking powder
1 can (8 oz) crushed pineapple packed in juice, undrained
2 egg whites
Recipe
Combine the milk, wheat bran, and brown sugar, let sit for 15 mins.
Combine the flour and baking powder and stir to mix well. Add the bran mixture (above) the pineapple and juice and the egg whites, and stir until the dry ingredients are moistened
Coat muffin cups with non stick spray and fill about 3/4 full with batter. Bake at 350 for about 18 mins.
