1 large onion, cubed
1 medium zucchini, cubed
1 green pepper, cubed
1 red pepper, cubed
12 mushrooms, cubed
1 teaspoon olive oil
1/2 teaspoon salt
6 teaspoons pepper
1 (28 ounce) can tomatoes, chopped
1 teaspoon garlic, crushed
1 tablespoon basil
1 tablespoon parsley
1/2 teaspoon thyme
1/4 teaspoon oregano
Recipe
1. On a lined cookie sheet,spread onions,zucchini,pepper and mushrooms.
2. Sprinkle with olive oil,salt and pepper.
3. Roast uncovered at a 425* oven for 45 minutes.
4. Meanwhile bring a 28 oz can of tomatoes to a boil then simmer with the garlic.
5. Combine with roasted vegetables and herbs.
6. After adding the vegetables and the herbs to the tomaotes simmer another 30 minutes.
7. Serve with freshly cooked penne or pasta of your choice.
8. Spinkle with shaved parmesan cheese and freshly crushed pepper.
