You won't miss the meat in this lowfat chili.
List of Ingredients
2 cloves, minced garlic
3 cup(s) mushrooms, diced
3 tbsp chili powder, or , to taste
2 tsp red wine vinegar
2 tbsp flour
4 tbsp oil
2 large eggplant
1 medium onion
2 can(s) kidney beans, drained
1 can(s) butterbeans, drained (optional)
2 large cans, tomatoes cut up with juice
1 can(s) 15 oz. tomato sauce
Recipe
Peel and dice eggplant in one-inch cubes.
Saute garlic, onion and eggplant in oil.
Simmer for 10 minutes.
Chop mushrooms. Then add flour and mushrooms to onion mixture.
Add remaining ingredients and simmer for 30 minutes.
