    Basil Chicken w/Vegetables

    1 tbsp Olive Oil
    3 cl garlic -- minced
    1 lb Skinless Chicken Breasts - 2"cubes
    1 med Zucchini -- cubed
    2 med Tomatoes -- cubed
    1 tbsp Dried Basil
    2 tbsp Vinegar
    1/4 tsp Pepper

    Recipe



    Heat oil in a skillet, saute garlic. Add chicken and cook until no longer pink, set aside.
    Combine zucchini, tomato, basil and vinegar.
    Toss coat vegetables well. Add to skillet and stir-fry about 3-5 minutes. Return chicken to skillet and heat through.
