    Blackened Chicken Mexicana

    List of Ingredients

    6 chicken breast halves without skin
    2 tbsp chili powder
    2 tbsp lime juice
    1 tbsp olive oil -- or vegetable oil
    2 garlic clove -- minced
    1/2 tsp salt
    1/2 tsp ground cumin
    1/2 tsp red pepper -- dried crushed
    10 bibb lettuce leaves

    Recipe

    Place chicken in a shallow baking dish. Stir together chili powder and next 6 ingredients until blended; spoon over chicken, turning to coat. Chill 30 minutes.


    Cook chicken in a large nonstick skillet coated with vegetable cooking spray over medium heat 5 minutes on each side or until done. Arrange lettuce leaves around edges of large serving plate.

    Serve with fresh green salad.
