Chicken Parmesan II

2 pounds boneless, skinless chicken breasts
1 large bag plain pork rinds, crushed
2 eggs, beaten
Italian seasoning
1 small can tomato sauce
12 oz shredded mozzarella cheese
Recipe
Preheat oven to 350 degrees. Lightly grease a 9 x 13 baking dish (I use the cooking spray).
Combine Italian seasoning with crushed pork rinds to taste (I like a fairly heavy ration of seasoning).
Dip each piece of chicken in the egg, then coat in the pork rinds and place in the baking dish. Do this to all of the chicken.
Bake the chicken uncovered for 25 minutes (if it was slightly frozen, then bake a little longer).
Spread a small amount of tomato sauce over each piece of chicken. I end up with about a tablespoon or so per piece of chicken. Evenly distribute the cheese over each piece of chicken. Return to the oven and bake until the cheese is melted, 10-15 minutes.
