    List of Ingredients




    4 Large green onions, chopped
    2 T Chopped fresh garlic
    4 T Olive oil, divided
    1 28 Ounce can whole mexican flavored tomatoes
    1 4 Ounce can whole green chiles, cut into 1" strips
    1/2 C Coarsely chopped fresh cilantro
    6 Boneless, skinless chicken breasts
    Salt and pepper to taste

    Saute onions and garlic in 1 T olive oil until saftened, about 4 - 5 minutes. Add tomatoes, green chiles, and cilantro. Bring to boil and then lower heat and simmer for about an hour.

    Pre-heat oven to 350F.

    Pan fry chicken in remaining olive oil until golden on both sides and juices run clear. Transfer chicken to baking dish, cover with sauce and bake for about 45 minutes.

    Serving Suggestions:
    Make a salad topped with cheese, green chiles and lime dressing.

    Additional Comments:
    This is very good and very low carb.
