    Quiche Lorraine

    List of Ingredients

    2 tbs. butter
    1/2 cup chopped yellow onion
    1 cup sliced fresh button mushrooms
    2 eggs
    2 egg yolks
    1 1/2 cups half-n-half
    2 tbs. sour cream
    1/2 pound bacon, cooked crisp, drained & crumbled
    1/4 pound (1 cup) shredded swiss cheese
    1 tsp. Dijon mustard
    1/2 tsp. coarse salt
    1/4 tsp. freshly ground pepper
    1/8 tsp. cayenne pepper

    Preheat oven to 425°F. Sprinkle bacon, cheese and onion in the bottom of a 9" pie pan. Beat eggs lightly and beat in remaining ingrediants. Pour cream mixture into pie pan. Bake in oven for 15 minutes. Reduce temperature to 300°F and bake 30 minites or longer or until knife inserted 1" from the edge comes out clean. Let stand 10 minutes before cutting. Serve in wedges. For firmer texture, cook additional 10 minutes. 4.3 carbs per serve.

    I would say with this one, you could throw all sorts of veggies into it. It seems like a good base to start with.
