    Spinach Salad w/ Warm Bacon Vinaigrette

    List of Ingredients

    7 oz fresh spinach leaves, rinsed and patted dry with paper towels

    3 eggs, hardboiled and rough chopped

    3 mushrooms, sliced thinly

    6 slices of bacon

    1/4 cup balsamic vinegar

    1/4 cup water

    1/4 cup olive oil

    1 packet Equal or other artificial sweetener

    salt

    freshly ground pepper


    Recipe

    In a skillet over medium-high heat, fry the bacon until crisp and remove from pan. Place on paper towels to cool.


    Add the water, vinegar, oil, a dash of salt, and a few turns of pepper to the pan and whisk constantly while bringing it to a boil scraping the bottom of the pan for the good bits left from the bacon, as well.

    Pour the dressing into a small cup to cool and add the sweetener - stir or whisk well. In a bowl, crumble the bacon into pieces and add the egg, mushrooms, and spinach.

    Pour the dressing over the top and toss to blend.
