10-Minute Szechuan Chicken

2 Chicken breasts (4 halves-skinless) cut into 1 1/2 inch cubes
3 TBL Cornstarch
3 TBL Vegetable Oil
3 Cloves minced garlic
5 TBL Soy Sauce (low-sodium is OK)
1 1/2 TBL White Wine Vinegar
1 tsp. sugar
1/4 cup water
6 green onions cut into 1/4 inch slices
1/8 tsp. Cayenne pepper or to taste

SPRAY PAN WITH "PAM"
Cut chicken into 1 1/2" cubes.
Lightly toss with cornstarch in a baggie to coat.
Heat oil in skillet, stir-fry chicken and garlic until lightly browned.
Add soy sauce, vinegar, sugar and water.
Cover and cook for 3 minutes or until chicken is cooked through.
Add green onions and cayenne; cook uncovered for about 2 minutes longer.
Serve over hot cooked white rice.
