    pears need not be completely ripe; firmer pears simply require slightly longer cooking

    if you have crystallized ginger, use it in place of the fresh ginger; if you don’t have white wine, use red wine instead and omit the ginger

    Before You Start:

    Ginger Poached Pears



    2 cups dry white wine

    2 cups water

    3/4 cup sugar

    2-inch knob fresh ginger, unpeeled

    2 cinnamon sticks, each about 3 inches long

    4 whole cloves

    4 pears

    1. In a saucepan just large enough to hold the pears upright and with a cover, combine the 2 cups white wine, 2 cups water, 3/4 cup sugar, 2 cinnamon sticks, and the 4 whole cloves. Slice the ginger into thin rounds and add to the pan with the 4 pears, standing them upright. Cover the pan and bring the mixture to a boil over high heat.
    2. Reduce the heat to medium-low and partially uncover the pan. Simmer gently for 10 to 15 minutes, turning the pears occasionally in the syrup, until the pears are fork-tender.
    3. Serve the pears warm with the syrup spooned over the top, or let the pears cool in the syrup and serve them at room temperature.

    A spoonful of whipped cream or vanilla ice cream is an excellent foil to the spicy, gingery syrup. For Poires Belle-Helene, a more elaborate presentation, place a scoop of ice cream in each individual serving bowl. Set a pear on top and drizzle with store-bought chocolate sauce that has been warmed in the microwave.

    Simple and refreshing as a dessert, these pears can also become a salad with ease. Cool them in the syrup and serve them sliced and fanned over a bed of torn lettuce garnished with crumbled Gorgonzola cheese.

    Tips:
    If the pears are very ripe, cook them for half the time, so that they’re just fork-tender and not mushy.
