    "This easy skillet meal works well for busy weeknights when family schedules call for quick meals. By adding dried cranberries, almonds and a simple orange ginger sauce, chicken breasts and a basic stuffing mix take on a new flavor."

    List of Ingredients




    1/4 cup butter, divided
    1 1/2 pounds boneless, skinless chicken breast*
    1/4 teaspoon McCormick® Coarse Ground Black Pepper
    1 2/3 cups water
    1/2 cup dried cranberries
    3/4 teaspoon McCormick® Ground Ginger , divided
    1/4 cup slivered almonds
    1 package (6 ounces) stuffing mix for chicken (such as Stove Top®)
    1/3 cup orange marmalade
    1 tablespoon orange juice

    Recipe



    1. Melt 1 tablespoon butter in large nonstick skillet over medium-high heat. Sprinkle chicken with pepper. Sauté chicken approximately 3-5 minutes per side or until cooked through and lightly browned.

    2. Remove chicken from skillet; keep warm. Add water, remaining 3 tablespoons butter, and cranberries to skillet. Heat until butter melts and water boils. Reduce heat to low. Stir in 1/2 teaspoon ground ginger, slivered almonds, and stuffing mix.

    3. Place chicken on top of stuffing. Stir together orange marmalade, orange juice, and remaining 1/4 teaspoon ginger. Spoon mixture evenly over chicken. Cover skillet and heat 3-4 minutes.


    SERVES 6

    *Pound chicken breasts with a meat mallet or the edge of a heavy skillet for quicker, more even cooking.
