    Heads Up! - Don't confuse light mozzarella with part-skim mozzarella. Part-skim is somewhat higher in both fat and calories. You want light mozzarella here.

    Here's How to Make It in 20 Minutes:

    Before You Start:

    Preheat the oven to 450F to bake the pizza.

    Step 1: make the salad pizza

    1 12-inch prebaked pizza crust (16 ounces)
    1 can (15 ounces) white beans, drained
    8 cups prewashed spring or baby greens
    1 cup cherry tomatoes (about 8 large)
    1 jar (7 ounces) roasted peppers
    2 tablespoons drained capers
    2 tablespoons extra virgin olive oil
    1 tablespoon balsamic vinegar
    1/2 teaspoon Dijon mustard
    Salt and pepper
    1/2 cup grated light mozzarella

    1. Preheat the oven to 450F. Place the pizza crust on a large side-less baking sheet.
    2. While the oven heats, prepare the topping: Drain and rinse the white beans. Cut the salad greens into 1-inch pieces. Lightly mash about half the beans with the back of a fork. In a bowl, toss the greens and beans together.
    3. Cut the tomatoes into quarters. Drain the jar of roasted peppers and cut the peppers into 1/2-inch pieces. Add the peppers, tomatoes, capers, and remaining beans to the salad mixture.
    4. In a small bowl, combine the olive oil, balsamic vinegar, mustard, and salt and pepper to taste. Add the dressing to the salad mixture and toss to combine.
    5. Top the pizza crust with the salad mixture, then scatter the grated mozzarella over the top. Bake for 10 minutes.

    Step 2: prepare the roasted bananas with low-fat vanilla frozen yogurt

    Vegetable cooking spray
    3 large firm-but-ripe bananas
    1 1/2 cups low-fat vanilla frozen yogurt, softened

    1. Do not turn the oven off after baking the pizza. Spray a large baking sheet with sides lightly with vegetable cooking spray.
    2. Peel the bananas, then halve them crosswise and lengthwise to make 12 spears. Arrange the banana pieces in a single layer on the baking sheet. Roast the bananas for 5 to 7 minutes, or until lightly colored and hot.


    Step 3: serve

    1. With a pizza cutter or sharp knife, cut the pizza into wedges and serve at once. (Forks and knives are recommended.)
    2. When ready for dessert, serve the roasted bananas while still hot, each serving of 2 pieces topped with 1/4 cup of the frozen yogurt.
