White Chicken Chili Grilled Quesadillas

List of Ingredients
1 tablespoon vegetable oil
1 pound boneless, skinless chicken breasts, cut into 1/2-inch cubes; or, 1 lb. ground chicken
1 can (15 ounces) black beans, drained and rinsed
1 can (8 3/4 ounces) corn, drained
1 can (4 1/2 ounces) chopped green chiles
1 package McCormick® White Chicken Chili Seasoning
8 (8-inch) flour tortillas
2 cups shredded Cheddar cheese
Recipe
1. Heat oil in large skillet over medium-high heat (Note: Omit oil if using ground chicken.) Add chicken; cook and stir 5 minutes, or until golden. Add beans, corn, chiles, and seasoning, plus 1/4 cup water; stir well. Reduce heat and simmer 7 minutes, stirring occasionally.
2. Meanwhile, lightly brush one side of each tortilla with vegetable oil. On non-oiled side, top half of each tortilla with 1/2 cup chicken mixture and 1/4 cup cheese. Fold in half.
3. Grill over medium heat 2 to 3 minutes on each side; turn and continue grilling until cheese is melted and tortilla is nicely browned. Cut into 4 wedges.
SERVES 8
Serving Suggestion: Serve with salsa, sour cream, and/or guacamole.
