Bran: Refrigerator Bran Muffins

3 cups whole bran cereal
1 cup boiling water
½ cup shortening
1 ½ cups sugar
2 eggs
2 cups buttermilk
3 cups sifted all-purpose flour
2 ½ teaspoons baking soda
½ teaspoon salt
Recipe
Heat oven to 400 degrees. Put bran cereal in large bowl. Pour in boiling water and set aside until cool. Put shortening and sugar in large bowl and beat until blended thoroughly. Beat in eggs, one at a time. Alternately mix in soaked bran and buttermilk. Thoroughly mix flour, baking soda and salt. Add to bran mixture and mix gently until ingredients are thoroughly moistened, taking care not to overmix. Pour batter into well-greased muffin pan cups (or use paper liners), filling each about 2/3 full. Bake in preheated oven 15-18 minutes. Test centers with pick. Loosen muffins with sharp knife, if necessary. Once baked, cooled muffins may be frozen in large plastic bag.
Batter may be store in tightly covered jar in refrigerator as long as 3 weeks. When ready to bake, preheat oven. Pour batter into muffin cups and proceed as above.
