    Corn: Double Corn Muffins

    List of Ingredients

    2/3 cup milk
    3 tablespoons oil
    1 egg
    3/4 cup yellow cornmeal
    3/4 cup flour
    2 tablespoons sugar
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup cooked or canned corn kernels


    Recipe

    Stir dry ingredients together and set aside. Beat milk, oil and egg together. Stir in dry ingredients and corn just until mixed.

    Divide batter evenly in 8 medium muffin cups that have been greased on the bottoms only. Bake at 400 degrees about 18 minutes.

    Makes 8 muffins
