Orange: California Orange Muffins

1 cup butter-flavored shortening
1 cup sugar
4 eggs, separated
1/2 cup orange juice
2 tbsp. grated orange zest
2 tsp. orange extract
1 tsp. vanilla extract
2 cups all-purpose flour
2 tsp. baking powder
1 tsp. salt
Recipe
Heat oven to 375ºF (185ºC).
In a mixing bowl, cream shortening and sugar. Beat in egg yolks. Combine orange juice, zest and extracts.
Combine flour, baking powder and salt; add to creamed mixture alternately with juice mixture. In a mixing bowl, beat egg whites until stiff peaks form; fold into creamed mixture. Fill paper-lined muffin cups 3/4 full.
Bake 20 - 25 minutes, until a toothpick comes out clean. Cool 5 minutes before removing from pan to a wire rack.
Makes 12 servings.
