Rhubarb: Rhubarb Muffins

1 1/4-cups brown sugar, firmly packed
1/2-cup salad oil
1-egg
2-tsp vanilla
1-cup buttermilk
1 1/2-cups rhubarb, diced
1/2-cup walnuts, chopped
2 1/2-cups all purpose flour
1-tsp baking soda
1-tsp baking powder
1-tsp salt
TOPPING:
1-tbsp butter or margarine, melted
1/3-cup white sugar
1-tsp cinnamon
Recipe
In large bowl combine sugar, oil, egg, vanilla and buttermilk. Beat well and stir in rhubarb and walnuts. In separate bowl, stir together dry ingredients until well blended. Add dry ingredients to rhubarb mixture; stir until just blended. Spoon batter into muffin pans filling about 2/3 full.
Combine and sprinkle cinnamon mixture (TOPPING) over filled cups and press lightly into batter. Bake at 400º for 20 to 25 minutes. Don't overfill the muffin pan or they will overflow.
