Recipe Introduction
This delicious West African bread contains both chili and peanuts and is baked in muffin tins. The muffins freeze well are particularly good when they are served warm.
List of Ingredients
1/2 cup butter
1/2 teaspoon salt
1 teaspoon peri-peri powder, or substitute cayenne
1/4 cup sugar
2 eggs, lightly beaten
1/2 cup milk
1 teaspoon baking powder
1 1/2 cups all purpose flour
3/4 cup finely chopped unsalted, roasted peanuts
Recipe
Preheat the oven to 400 degrees F. Cream the butter, salt, chili powder, and sugar until the mixture is light; mix in the eggs and milk. Sift the baking powder and the flour together. Add this mixture to the creamed mixture and stir until the ingredients are blended. Stir in 1/2 cup of the peanuts. Fill the greased muffin tins about 1/3 full and sprinkle the tops of the muffins with remaining peanuts. Bake at 400F for 12 minutes. Serve the muffins hot with honey drizzled over the top.
Servings: 12 large or 18 small muffins
