Farfalle (Bow Tie) Pasta with Salmon

List of Ingredients
1 lb. farfalle pasta
2 Tbsp. virgin olive oil
2 cups sliced leeks
1/2 cup mushrooms
2 Tbsp. butter
6 plum tomatoes, seeded and sliced
1/2 cup half and half
8 oz. smoked salmon, sliced into small matchstick strips
Recipe
In an 8-qt. pot, boil 6 quarts of water. Add the pasta and boil until tender.
In a saute pan, add 1 Tbsp. of olive oil and saute the leeks until translucent. Add the mushrooms and cook for 2 minutes. Add the other Tbsp. of butter, tomatoes and half and half.
Cook for 4 minutes or until the sauce starts to thicken. Add the salmon. Keep warm until tossed with the pasta.
When the pasta is tender, drain, add the sauce and toss until coated. Top with sliced fresh tomatoes and chopped parsley.
