Recipe Introduction
This recipe (which comes from Jeanne Reinig Smith via her daughter-in-law Emily Reinig) is named for an episode of Seinfeld in which Kramer makes a statue of Jerry out of fusilli pasta.
List of Ingredients
1 jar (8.5 ounces) oil-packed sun-dried tomatoes
2 tablespoons red wine vinegar
2 cloves garlic, coarsely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound fusilli pasta
1 pint grape tomatoes, halved lengthwise
1 jar (12 ounces) roasted red peppers, drained and cut into thin strips
8 ounces fresh unsalted mozzarella, cut into 1/2-inch cubes
1/3 cup chopped fresh basil
5 tablespoons capers, rinsed and drained
Recipe
1. Reserving the oil, drain the sun-dried tomatoes. Transfer 10 of the tomatoes to a mini food processor and add 3 tablespoons of the reserved oil, the vinegar, garlic, salt and pepper. Process to a smooth puree and set the dressing aside.
2. In a large pot of boiling salted water, cook the pasta according to package directions.
3. Meanwhile, cut the remaining sun-dried tomatoes into thin slivers and place in a large bowl. Add the grape tomatoes, red peppers, mozzarella, basil and capers.
4. Drain the pasta and add to the bowl. Add the dressing and toss everything together. Serve hot, warm, at room temperature or chilled.
