    1/2 pound ground turkey or beef
    1/4 cup chopped onion
    1 clove garlic, finely chopped
    1/2 teaspoon Italian dressing
    1/2 teaspoon basil
    1 tablespoon dried parsley
    1/4 teaspoon crushed red pepper (optional)
    Salt and pepper to taste
    6 lasagna noodles
    1 (6 ounce) can tomato paste, plus 1 can water
    1 cup sliced fresh mushrooms or 1 (4 ounce) can mushrooms, drained
    10 ounces fresh or frozen spinach leaves, chopped
    2 tablespoons finely chopped onion
    6 ounces low-fat ricotta cheese
    1/2 clove garlic, finely chopped
    6 ounces mozzarella cheese, shredded (reserve 3 ounces for top)

    Preheat oven to 350 degrees. Sauté beef, onion and garlic, Add seasonings, tomato paste and water. Simmer about 10 minutes. Stir in mushrooms. Steam fresh spinach, onion and garlic, stirring occasionally until spinach is wilted. Mash out excess liquid using wire strainer. (For frozen spinach, thaw and mash out excess water.) Add 1/4 teaspoon black pepper if desired. Stir until well blended. Boil 6 lasagna noodles until tender; drain. In 9"x9" square or 7"x11" casserole dish, layer 3 noodles, 1/2 meat mixture, entire spinach/cheese layer, 3 noodles and remaining meat mixture. Bake 30 minutes. Top with 3 ounces mozzarella.

    Serves: 6
