    Tart: Butter Tarts

    List of Ingredients

    1 1/4c vegetable shortening

    ¼ c unsalted butter

    4 c unbleached all purpose flour

    1 ½ tsp salt

    ¼ c cold water




    Recipe

    Cream shortening and butter and sift in the flour and salt.

    Mix till crumbly.

    Stir in enough cold water to make soft dough.

    Knead 30 sec.

    Roll between 2 sheets parchment paper to 1/8” / 3 mm

    Cut into 4” circles.

    Ease into pans and chill for 30 min.



    Filling:

    ½ c unsalted butter – softened

    1 c packed brown sugar

    1 ½ tsp vinegar

    ½ tsp salt

    1 ½ tspvanilla

    2 eggs

    1 1/4 corn syrup

    ½ c raisins



    Set oven to 350 degrees F.


    Cream together butter, sugar and salt.

    Add vanilla, vinegar, eggs & syrup

    Don’t over mix.

    Chill 30 min.

    Place 1 tsp raisins in each tart

    Add ¼ c syrup mixture into each shell over the raisins.



    Bake 25-30 min.

    Cool in pans. Let set for 2 hours.



    Makes 12-14 tarts
