    500g pack of fresh puff pastry
    200g marzipan
    4 tablespoons lemon curd
    3 Braeburn apples, cored, quartered and sliced
    1 tablespoon milk
    3 tablespoons apricot glaze warmed through

    Recipe



    Preheat the oven to 200C, 400F or Gas mark 6.

    Roll out the pastry on a floured surface and using a 10cm (4 inch) plain cutter, cut out 12 circles.

    Place the pastry circles on a baking tray. Roll out the marzipan and using a 7cm (3 inch) cutter, cut out 12 circles of mazipan.

    Place 1 on each circule of pastry and spread over 1 teaspoon oflemon curd. Arrange the apple slies over the lemon curd.

    Brush the edges of the pastry with milk, place on a baking tray inthe oven and bake for 15 minutes.

    Allow to cool slightly before brushing with warm apricot glaze.


    Serve the puffs with lightly whipped cream.
